I thought the pizza was going to be fabulous and sadly I was disappointed. It wasn't that great considering the rocking oven they've got. I'm a pizzaiolo. Mine is definitely better, if I do say so myself. I prefer Ruby's to Wicked Wood. Can't say exactly why but the overall flavor wasn't that great. Maybe the mozzarella they're using? I wonder how long they let the dough rise. I do at least a 24 hour rise with a spell in the fridge. Makes the crust very flavorful. There was kind of a long wait considering I ordered ahead but, you know, it's a food truck. Atmosphere at Fossil Cove Brewing Co. is great.
