LE SAFRAN Restaurant was inspired by the pureness of the “Moroccan Queen of Spices”, and the love for creating fabulous Mediterranean cuisine and traditional dishes with our Chef’s obsession on local and seasonal highest quality products. In our Chef’s continuous search for the best local and seasonal ingredients to use in his kitchen, we traveled to the Ourika Valley at the foot of the Atlas Mountains, to a little village called Taliouine and met the people who harvest the precious saffron.
