Unbelievable experience! The mail here was comparable to any Michelin star restaurant meal I've had. The presentation for every single dish was fun and innovative. Food takes you on a journey around Mexico, presenting you with ingredients and presentations most tourists will not have encountered. And the menu is jam packed with high end ingredients; foie gras, bone marrow, oysters, caviar, sweetbreads, truffle, beef tongue, days-long moles, fresh made tortillas, local chocolates . . . the list could go on and on. The wine pairing was a worthy add-on as well. Only downside of going to this restaurant is that if you are not staying at this resort, getting to the restaurant is outrageously expensive, and will add a significant amount to the total cost of an already pricey experience if you don't have your own transportation. This restaurant is amazing. The best fine dining experience in Cancun. They have some of the most beautiful presentation for their dishes that I have ever seen and it was all delicious and unique. That being said if you are a picky eater or have texture issues this may not be the place for you. But if you are open minded and enjoy complex flavors this place is must! Make sure you make reservations well ahead of time. It’s nearly impossible to get in last minute.

Dinner was excellent. Service was beyond any thing I could imagine. Each course was unique and different. It does challenge your taste buds. The flavors were outstanding even for things that I would never order at another restaurant. This was our third time here and we will definitely be back. Outstanding presentation, flavor development, and combinations. The service and explanation of each dish was a fun journey through México. We did the Mexican wine pairing, which was excellent. Amazing multi-sensory culinary experience! Every dish was perfect both in terms of presentation and taste. The wine tasting is definitely worth it as it fits well with the dishes and adds something extra to the experience. Our waiter and sommelier did an amazing job taking us through our menu. Special thanks to our fantastic waiter who accompanied us from and to the lobby to get our taxi and who made our whole dining experience very enjoyable! At the end we even got a tour of the kitchen to meet the people behind those incredible Michelin-quality dishes. This is probably my favorite restaurant in the world!

A 20-course fine dining experience for a little over $100 usd is a pretty good deal imo. However, it is only worth it if you can eat a lot because only then you will be able to enjoy all the food. First off, we get a mezcal cocktail with some popped jelly and some spicy salt on the cup. It has a smokey flavor, tastes okay. Then, we have margarita in a chocolate covered in gold. The next couple appetizers bring in a lot of texture and flavors. I really like the walnut with chocolate, truffle, and foie gras. it is really delicious, a little sweet, a little savoury. One thing that I don't really like is we have to use hands for the food. The fruit salad with cheese powder, citrus sauce, and chili with butter paste is really interesting and I like it a lot too. The homemade tortilla with beans wrapped in a leaf with ant eggs and chileatole sauce is very earthy. Next up is the seafood. This is my least favorite part because I'm not a big seafood fan, and also a couple of the dishes are raw. And I think for this price, I expect some sort of substitution if the guest can't consume raw food, but there are only 2 substituted dishes and the rest is just taken off. I got cooked octopus instead of raw seafood with some creamy sweet and green sauce that is really tasty. It is a little sour and has a hint of spicy but I still like it a lot. The other seafood dishes are okay, some not that good. The beef cooked with plantain is really amazing. You eat it with warm blue corn tortilla. The meat is very tender and the plantain paste is really delicious. For dessert, the chocolate ball with ice cream and guava is yummy. The crepe with sea salt ice cream is a little too salty for dessert imo. The chocolate pop rocks caramel is good as well. As this point, we can't really eat anything else anymore so can't give accurate reviews on the chocolate tower. Service overall is good. It is located in a very nice resort. Truthfully the worst tasting food we have ever had in our lives… The visual aspect is phenomenal and you won’t see anything else like this. But the food tastes absolutely awful. I am all for trying new foods and experiencing other cultures, but this was beyond bad. We looked around and people at other tables were gagging trying the food as well. We paid $110 USD/person for the 20 course tasting, and you could not pay us to go back. 10/10 do NOT recommend. Spend your money elsewhere.

If the idea of fine dining is a steakhouse with contemporary American food, or if one identifies as "a meat and potatoes person," this place may not be up your alley. The food here is very avant-garde, inventive, and has a focus on molecular gastronomy. Each course is visually stunning, delicious, and still stays true to local and seasonal ingredients. The food is still very "Mexican" and represents food from different regions of Mexico. Their wine list does have some regional wines from Mexico, from their wine country in Baja. Familiarity with regional cuisine will help one appreciate the chef's reinterpretations of other Mexican dishes. I also enjoyed the level of difficulty and technique is needed to execute each course. I took a kitchen tour after my meal. It was part kitchen part laboratory; they had almost every gadget that Breville Poly Science makes. I had an opportunity to meet the head chef, Alejandro Villagrana Perez, who was amazing. He told us that they also train and teach future chefs studying at the local culinary school, which many were in the kitchen that service. Excited to see what the next generation of chefs does in Quintana Roo. It is one of the most amazing meals I've ever had. I can't believe they are only 30 on the Latin America "Best 50" list. If you are ever in the Cancun area, I would highly recommend making a reservation. Service Dine in Meal type Dinner

The food is outstanding by itself; the experience provided by staff and management truly take this to a new level. Cannot recommend this enough. 21 course meal with a journey wine pairing was perfect.
