I really enjoyed the nova Café on main Street in Bozeman, Montana for breakfast. The café itself is one of the most colorful ones I’ve ever been in, with artwork on the walls. For food, I wanted something healthy and ordered an omelette that was loaded with nutritious vegetables and it was delicious. I love this place, I stopped by years ago on a road trip, and it was still as good as I remember. The food was fresh and very delicious. I had the fall harvest skillet. The homemade biscuit was one of the best I've had. The art on the walls and overall atmosphere was great. The staff was very nice, they were very busy so I get the running around. The price was great, very reasonable. That being said, I do live near Seattle, so that might just be me. Highly recommend. We stopped here for breakfast. Very colorful and quirky decor, but I liked it. The coffee was great and so was the "Cowboy Hash Bowl" with sautéed onions, peppers, home fries, habanaro sausage, bacon, ham, & eggs. Served with toast. I ordered a side of sausage gravy to put on top...it was delicious! I noticed at another table, someone ordered the waffles and a breakfast burrito. Both looked phenomenal! What a disappointment after reading all of the good reviews... we waited about half an hour to get in for breakfast, which is typical for a bozeman restaurant. They have an interesting menu and cater to a college and vegan crowd with the decor to match. We had the sausage biscuits and gravy. The biscuit was light crispy on the outside and fluffy on the inside with accents of rosemary. The gravy was loaded with sausage and served with home fried potatoes. The flavor was decent but was way over salted on all items. As a chef you should always taste your food before it goes to the floor. We heard similar comments from other tables while we were there. The gravy for their biscuits and gravy is less gravy and more thicc than Cardi B’s backside. Side of sausage we ordered was not completely cooked and had been forgotten until 7minutes after the other food came. Eggs were cooked correctly and home fries were awesome. Excellent breakfast stop! Large menu with a dedicated vegan section. The tofu eggs may not look like anything special but they were fantastic! They have classics as well as more out there breakfast takes. Great service, the team is a well oiled machine that’s for sure.
